Whip up a batch of “Bourbon Peach Smash.”
Make your own simple syrup: In a small saucepan, add 1/2 cup sugar, 1/2 cup water, 2 mint leaves, and 1 nob of fresh ginger, minced. Bring to a boil, mix ingredients, then lower to a simmer until sugar is dissolved. Strain and refrigerate.
In a pitcher, add 2 large peaches, cubed, 6 mint leaves, and the simple syrup. Muddle ingredients, then add 1 cup bourbon and fill with crushed ice. Top with 4 cups Seagram's Ginger Ale and stir well, pulling the peach/syrup mixture to the top. Garnish with mint.
