Cheers to the weekend with a “Pear and Ginger Mint Splash.”
In a saucepan, combine 1/3 cup honey and 1 cup water over medium heat and bring to a boil, then simmer on low until honey is completely dissolved. Add 2 pears, peeled, cored and diced, 1/3 cup fresh ginger, diced, and 20 fresh mint leaves. Simmer for 15-20 minutes with occassional stirring. Drain the syrup into a large mason jar. Discard mint and ginger. In a large pitcher, combine cooked pear, remaining mint leaves, and simple syrup. Top with 1 bottle of champagne or sparkling wine and 2 cups Seagram's Ginger Ale.
